Enchilada vegetariana

Exista multe variante de enchilada insa eu am preferat-o pe aceasta simpla, vegetariana si usor de preparat care se poate servi gratinata sau wrap. Enjoy!

Ingrediente (organice):
– o cana de orez basmati
– o ceapa tocata marunt
– 4 catei de usturoi tocati marunt
– un dovlecel taiat cubulete
– 1 ardei gras taiat cubulete
– 200 g fasole boabe fiarta (conserva)
– 150 g porumb fiert
– 200 ml sos de rosii
– 50 ml ulei masline
– 200 g branza cheddar rasa
– sare
– piper
– cumin
– lipii pentru servire
– un vas termoizolant

Mod de preparare:

Recomandat este sa puneti orezul la inmuiat cu 12 ore inainte (AICI mai multe detalii).
Fierbeti orezul conform instructiunilor; scurgeti bine de apa si lasati sa se raceasca.

Incingeti cuptorul la 180 grade Celsius.

Intr-un wok caliti ceapa si usturoiul timp de 5 minute la foc mic apoi adaugati ardeiul si dovlecelul si caliti impreuna pana se caramelizeaza usor. Adaugati fasolea, porumbul, sosul de rosii, orezul fiert si potriviti de sare, piper si cumin dupa gust. Mai dati un clocot de cateva minute apoi opriti focul si turnati uleiul de masline.

Ungeti vasul termoizolant cu putin ulei de masline, turnati compozitia din wok in vas, presarati deasupra branza rasa si dati la cuptor timp de 20-25 de minute pana se rumeneste deasupra.

Serviti simplu cu salata verde sau cu lipii (wraps). Pofta buna!

Vegetarian enchilada

Ingredients (organinc):

  • a cup of basmati rice
  • a finely chopped onion
  • 4 cloves finely chopped garlic
  • a diced zucchini
  • 1 diced bell pepper
  • 200 g boiled beans (canned)
  • 150 g of boiled corn
  • 200 ml of tomato sauce
  • 50 ml of olive oil
  • 200 g grated cheddar cheese
  • salt
  • pepper
  • cumin
  • tortillas for wraps
  • a thermal bowl

Directions:

It is recommended to soak the rice 12 hours before (HERE more details).
Boil the rice according to the instructions; drain well and allow it to cool.

Preheat the oven to 180 degrees Celsius.

In a wok, sauté the onion and garlic for 5 minutes on low heat, then add the pepper and zucchini and cook together until lightly caramelized. Add the beans, corn, tomato sauce, boiled rice and season it with salt, pepper and cumin to taste. Boil for a few more minutes then turn off the heat and pour in the olive oil.

Grease the bowl with a little olive oil, pour the wok composition into the bowl, sprinkle the grated cheese on top and bake for 20-25 minutes until browned on top.

Serve with salad or in wraps. Good appetite!
