Conopida gratinata

Ingrediente organice (pentru 4 persoane):

– o conopida de marime medie
– 250 g rosii cherry/din conserva
– 1 morcov ras
– 4 catei de usturoi maruntiti
– ulei de masline
– un buchetel de patrunjel maruntit
– sare
– piper
– optional cascaval ras
– unt de cocos pentru prajit

Mod de preparare:

Incingeti cuptorul la 180 grade Celsius.

Taiati conopida in buchetele mici si fierbeti timp de 10 minute in apa cu sare apoi scoateti din apa.
Caliti morcovul, usturoiul si rosiile in unt de cocos timp de 3-5 minute pana se caramelizeza usor. Adaugati rosiile, omogenizati si opriti focul. Condimentati dupa gust cu sare si piper.

Asezati buchetelele de conopida intr-o tava unsa cu putin ulei de masline, adaugati si deasupra ulei de masline pentru a nu fi uscata apoi turnati deasupra legumele calite.

Dati la cuptor timp de 30 de minute, presarati apoi patrunjelul si cascavalul ras deasupra si coaceti inca 10 minute pana se rumeneste. Este absolut delicioasa! Enjoy!

Gratinated cauliflower

Ingredients (organic) – for 4 people:

  • one medium-sized cauliflower
  • 250 g cherry tomatoes / canned
  • 1 grated carrot
  • 4 cloves of chopped garlic
  • olive oil
  • a bunch of chopped parsley
  • salt
  • pepper
  • optional grated cheese
  • Coconut butter for frying

Directions:

Preheat the oven at 180 Celsius degrees.

Cut the cauliflower into small bunches and boil for 10 minutes in salted water then remove it from the water.
Saute the carrots, garlic and tomatoes in coconut butter for 3-5 minutes until lightly caramelized. Add the tomatoes, mix well and turn off the heat. Season to taste with salt and pepper.

Place the cauliflower bunches in a pan greased with a bit of olive oil, add olive oil on top so that it’s not too dry and then pour over the hardened vegetables.

Bake for 30 minutes, then sprinkle with parsley and grated cheese on top and bake for another 10 minutes until golden brown. It is absolutely delicious! Enjoy!
